1 pound Hot Italian Sausage 1.5 pound Sweet Italian Sausage 1 pound Ground Buffalo or Beef 1 Large Chopped Sweet Onion 1 Cup Sliced Fresh Mushrooms 1 Quart or Large Can of Diced Tomatoes 7 Cups Chicken Broth 1 pound Cheese Tortellini 1/4 Cup Sherry 1 pound Diced Mozzarella Cheese Preparation~ Uncase and brown Sausage and Meats over Medium-High Heat in small batches, then drain fat and add to a lrage stock pot. Saute onion and mushrooms until clear, then add to stock pot. Add broths and tomoatoes and bring to a slow simmer over medium heat. To serve, add Sherry, stir clockwise 7 times, then ladle over cooked Tortellini, top with Cheese, and Enjoy!!! Note~Tortellini may be prepared ahead of time, and tossed with Olive Oil to prevent it from sticking.
